Recipes shown on recent YouTube videos:

Baked orange chicken for two              

1 large boneless chicken breast

¼ cup of orange juice

¼ cup of buttermilk

1 teaspoon balsamic vinegar

Salt, pepper and garlic powder (half teaspoon each)’

 Pat chicken breast dry and add the above ingredients  in a gallon zipper bag

mix well; massage into chicken and let marinate for one hour (or overnight) in the  refrigerator.

Turn oven on to 350 degrees

Wash 2 medium size potatoes cut into chunks and put in cold water

After an hour

 Take Chicken out of bag and drench in 2 tablespoons of flour mixed with sall, pepper, garlic powder and ½ teaspoon crushed parsley,

Place on oiled baking dish over chunked potatoes. (spray dish with Avocado or olive oil).

For a more intense orange taste, zest an orange and mix into flour

Bake at 350 until internal temp reaches 165°F (74°C) about 30-45 minutes

Serve with green beans or salad

Salmon Patties with white sauce

1 cooked piece of salmon or 1 can of salmon

2 medium potatoes cooked and mashed

1 egg  whisked

1 Small onion chopped (about a ½ cup)

1 stalk of celery chopped

1 teaspoon minced garlic

For cream sauce: 1 pint of broth or water; one cup whole milk;

4 tablespoons butter and 4 tablespoons flour

Salt and pepper and/or optional seasonings (see below)

makes four patties

Instructions:

Crumble salmon and add to cooled mashed potatoes

With whisked egg

In a frying pan with 2 tablespoons of olive oil and 2 tablespoons of

Butter on medium heat cook onions and celery until tender

Add garlic, salt and pepper can also add parley or red pepper flakes

I added garlic and onion powder (with your heart)

Take off heat and let cool

Add this mixture to the salmon mixture.

You can add bread crumbs (or not) to make patties stick together

Form patties and Fry in pan with hot oil and butter

When crispy on both sides remove from pan and keep warm in oven by

Placing on a rack (if you want to,  you can drain on paper towel.

Add 4 tablespoon of butter with 4 tablespoons of flour to pan that

you cooked the salmon in and add 1 cup of broth (or water)

whisk and slowly add 1 cup of whole milk while whisking to make smooth

add seasonings like powdered garlic, onions, pepper etc. If you want

to make spicy add red pepper flakes, etc. You can also add lemon at this time.

Take patties out of oven and pour sauce over them. Serve with

A salad or vegetable (I chose lima beans as our side)
